South-of-the-Border Chicken Soup
ingredients
- 1 (4-lb) chicken, cut into 8 pieces
- 3 large celery stalks, each cut into thirds
- 3 medium carrots, peeled and each cut into thirds
- 2 medium onions, unpeeled and each cut into quarters
- 10 sprigs plus 1/4 cup fresh chopped cilantro
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 8 (2 1/2 lbs) medium all-purpose potatoes
- 1 can (15 1/4- to 16-ounce) whole-kernel corn, drained
- 2 teaspoons salt
- 1/4 cups fresh lime juice (about 2 large limes)
- 2 ripe medium avocados, cut into 1/2-inch cubes, for garnish
- tortilla chips, lime wedges, cilantro sprigs, for garnish
