Spicy Beef Enchiladas
ingredients
- 1+ pounds ground beef
- 1 small onion, diced
- 1 green pepper, diced
- 1 chipotle chile in adobo sauce, diced
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1/4 cup flour
- 2 tablespoons chili powder
- 2 cups water
- 1 tablespoon garlic, minced
- 3 cups cheddar cheese
- 1 package fajita size tortillas

1. In a large sauce pan heat oil and then add flour. As a paste forms slowly add the water and whisk to mix.

2. Add diced chipotle chili, chicken broth, chili powder, and 1 tablespoon adobo sauce and bring to a boil.

3. Taste and add more adobo or chili powder as necessary - if it is too spicy add more chicken broth and water until satisfied.

4. After boiling for 5 minutes reduce heat and simmer until meat mixture is complete.

MEAT MIXTURE:

1. In a large skillet add garlic, onions and peppers and saute until tender

2. Add beef and cook until browned (for some added taste sprinkle with chile powder).

3. Once beef is browned remove from heat and drain oil.

ENCHILADAS:

1. Preheat oven to 350°F.

2. In a large baking dish pour some of the sauce in the bottom of the pan to cover.

3. Put a large spoonful or so of meat mixture in a fajita shell and wrap it up. Place in the pan with the open edge down.

4. Repeat step 3 until the fajitas or meat mixture is gone. If there is any meat mixture left pour it over the top of the stuffed enchiladas.

5. Pour the remaining sauce into the pan to cover the enchiladas - leave about 1/4-1/2 inch space from the top of the pan to prevent spill over.

6. Pile on the cheese! Spread the cheddar cheese over the top of the enchiladas as desired.

7. Cover the top loosely with tin foil and bake for 15 minutes.

8. After 15 minutes remove foil and back for an additional 5 minutes.

9. Remove from oven and let cool a few minutes before serving.

There are many adaptations that can be made to this recipe - try it with diced chicken or spread some refried beans on the fajitas before adding beef mixture. Or if you really like cheese put some on the inside of the fajitas too!
