My grandmother got this recipe from the side of an oatmeal box long ago. She must have made it a hundred times in my childhood. It’s one of my favorites.

ingredients

  • 1 cup quick-cooking oats
  • 1 stick butter
  • 1 1/2 cups boiling water
  • 1 1/3 cups flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 tsp. nutmeg (fresh grated is best)
  • 1 tsp. cinnamon
  • 1/2 cup roasted pecans or walnuts
  • Glaze:
  • Powdered Sugar
  • Milk
  • 1 Tbsp. butter, melted
  • Vanilla

directions

Place oats and butter in a 2 cup dish. Pour boiling water over and let soften. Mix flour, salt and soda together and set aside. Cream sugar and eggs. Add nutmeg and cinnamon. Add oat mixture to creamed mixture alternately with flour mixture. Stir in nuts. Pour into 9X13-in. pan sprayed with non-stick spray. Bake at 325* for approx. 30 min or until toothpick inserted in center comes out clean. Do not overcook. In the meantime, prepare glaze by mixing powdered sugar, butter and vanilla in a small saucepan. Add enough milk to a glaze consistency and cook and stir just to boiling. Remove cake from oven and puncture holes with toothpick throughout the top. Pour warm glaze over and spread with an offset spatula. Sprinkle additional roasted nuts on top if desired.

notes

This sounds like a lot of steps but it's really very easy. Just don't make the glaze so far in advance that it hardens before the cake is done. If you use a dark pan, shorten cooking time.
