Tina's Black Bean and Corn Salad
My friend Tina of Boston created this delish dish. She says, “I do a lot by taste, so I don’t have exacts.” I have modified the salad recipe a bit since then. But it essentially a Tina Original.
2 cans of corn
2 cans of black beans
1 red bell pepper
1 green bell pepper
½ pint grape tomatoes, sliced in half
2 cloves minced garlic
black pepper
2 Tb of lemon juice
3 Tb of olive oil
a small bunch of fresh cilantro
3 stalks chopped scallions
Make sure to rinse the black beans and corn in a colander and then put in a large bowl. Otherwise the salad will have a brownish hue.
Cube the bell pepper. Add the sallions.
Put in bowl and mix lightly. Add lemon juice and olive oil and mix more. Add seasoning to taste.
