ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped (divided)
  • 2 cloves garlic, finely chopped (divided)
  • 1 pound ground chicken
  • 1 tablespoon sweet smoked paprika
  • Salt and pepper
  • Eight 6-inch flour tortillas
  • 10 ounce package frozen corn, thawed
  • 1/4 cup cilantro, chopped
  • Juice of 1 or 2 limes
  • 8 ounces Monterey jack cheese, shredded

    For corn salsa:

    In a medium bowl combine corn, half the onion, half the garlic, lime juice and cilantro. Season with salt and pepper. Cover and refrigerate.

    Heat a large skillet over medium heat. Add olive oil and cook the rest of the onions and garlic for one minute. Add the ground chicken and paprika, breaking up meat until cooked through. Season with salt and pepper.

    To serve, top each tortilla with meat, cheese and corn salsa. Add Cholula hot sauce for a kick!
