Summer cucumber salad
If you have a garden or know someone who does, you might experience an excess amount of cucumbers during summer months. This is a great way to use and they keep for a bit in the fridge too!
ingredients
- 1 large cucumber, thinly sliced half moons
- 1/2 med onion, thinly sliced half moons
- 1/2 cup apple cider vinegar (unrefined)
- 1/2 cup water
- 2 tablespoons honey
- cayenne, a pinch, optional
- salt, to taste

Mix all ingredients in a bowl.

Leave out for a couple hours to marinate.

Refrigerate and enjoy!
