If you have a garden or know someone who does, you might experience an excess amount of cucumbers during summer months. This is a great way to use and they keep for a bit in the fridge too!

ingredients

  • 1 large cucumber, thinly sliced half moons
  • 1/2 med onion, thinly sliced half moons
  • 1/2 cup apple cider vinegar (unrefined)
  • 1/2 cup water
  • 2 tablespoons honey
  • cayenne, a pinch, optional
  • salt, to taste

directions

  • 1

    Mix all ingredients in a bowl.

    Leave out for a couple hours to marinate.

  • 3

    Refrigerate and enjoy!
