Lottie's Company Shrimp
This is my favorite Lottie Lou dish bar none! It is straight from New Orleans to your table.
ingredients
- 2-3 c shrimp, peeled
- 1 cp Saffron rice mix
- 1 c sharp cheddar cheese
- 1/2 c green pepper, chopped
- 1/2 c green onion, chopped
- 1/2 c celery, chopped
- 1 stick butter
- 1 can mushroom soup
- 8 lemon slices
- season with Tony Chachere’s famous Creole seasoning.
directions
Saute and season shrimp in 1/2 stick butter. Cook Rice. Saute onion, peppers, & celery in 1/2 stick of butter. In large bowl add shrimp, soup,& rice mix. Add to greased 9x13 pan. Sprinkle cheese on top and decorate with lemon slices. Cook covered for 25 minutes at 375. Uncover for 5-10 minutes, or until good and bubbly.
notes
This can be made a day ahead or if frozen, make sure it is thawed before cooking.
