dad's turkey soup
keeps the whole house smelling like turkey after Thanksgiving...
ingredients
- 1 large turkey carcass
- carrots
- onions
- celery
- mushrooms
- barley
- anything else that suits your fancy
- salt & pepper

Fill large stock pot 3/4 full of water. Take turkey meat off carcass and bones and cut into bite size pieces.

Put carcass and bones in pot and simmer on low flame for 2 or 3 days. Drain all bones, etc., from stock so that all you have left is the stock.

After the 2 or 3 days chop up carrots, celery, onions and mushrooms (and anything else that strikes your fancy) and add to stock. When these have cooked, add the pieces of turkey and season to taste (garlic salt, pepper or whatever). Simmer for another few hours or to get as thick as you want and it should be ready to go.
