Pesto Shrimp
I never had the courage to try pesto before because it looked green and oily, but now I absolutely love it! It definitely helps when you make the pesto yourself by hand and know what’s in it.
ingredients
- 3/4 C mint leaves
- 1/2 C basil leaves
- 1/4 C pine nuts
- 1 garlic clove
- 1/4 C olive oil
- 2 Tb grated Parmesan
- salt
- pepper
- 1 lb uncooked jumbo shrimp, peeled and deveined
- extra oil for skillet

Blend mint, basil, pine nuts, garlic, olive oil, and parmesan together in food processor. Season to taste with salt and pepper.

Toss the shrimp with olive oil, salt, and pepper in a large skillet until cooked through, about 2 minutes per side. Toss shrimp with pesto and serve.
