Banana Pudding
ingredients
- 1/4 cup + 2 Tb flour
- 1 cup sugar
- 1/8 tsp salt
- 1 cup water
- 1 cup evaporated milk
- 2 large eggs, lightly beaten
- 1/4 cup butter
- 1 tsp vanilla extract
- 36 vanilla wafers
- 3 ripe bananas, sliced
- 2 cups frozen whipped topping, thawed
- toffee bits (optional)
directions
Combine first 3 ingredients in a medium saucepan; stir in water, milk, and eggs. Cook over medium heat, stirring constantly, until mixture thickens. Add butter and vanilla; cook, stirring constantly, until butter melts. Layer vanilla wafers and banana slices evenly in 6 individual dessert dishes; spoon pudding over banana slices. Top each serving with a dollop of whipped topping. Sprinkle each serving with toffee bits if desired.
