Light Shrimp Scampi
Light, Tangy Pasta Dish
ingredients
- 8 oz pasta--angel hair or spaghetti
- 2 T olive oil
- 4 clove garlic, peeled and minced
- 1 lb shrimp
- 1 cup fish stock or chicken broth
- 1/2 cup dry white wine
- 1/4 cup minced fresh Italian parsley or cilantro
- 4 tea. finely grated lemon peel
- 2 tea. corn starch
- 1/4 cup lemon juice
- black pepper to taste

Cook pasta according to the package directions; drain.

Meanwhile, in large skillet, heat oil and sauté garlic over medium high heat. When garlic sizzles, add shrimp and sauté just until they turn pink, about 1 minute. Stir in stock (or broth), wine, parsley (or cilantro) and lemon zest.

In a small cup or bowl, stir cornstarch with lemon juice until it dissolves, then whisk (very slowly) into shrimp mixture. Simmer until sauce begins to thicken slightly, about 1 minute. Serve over pasta and season to taste with pepper.
