Creole Rice Pilaf
ingredients
- 2 1/4 cups chicken broth *
- 1/4 cup white wine *
- (*adjust for rice quantity as per liquid instructions on box)
- 1 stick butter
- 1-cup brown rice
- 1/4 cup onion, chopped
- Salt and pepper - to taste
- 1/2 teaspoon oregano
- 1 1/4 cups mushrooms sliced (optional)
- 1/2 teaspoon garlic
- 1/2 teaspoon dried parsley
- 2 tomatoes, peeled, seeded, and diced
- 1 ripe avocado
- Lemon juice
directions
Cook rice in broth, wine and 6 tablespoons butter. Saute onion, garlic and mushrooms in remaining butter, 3 minutes. Add tomatoes, oregano and season with salt and pepper to taste. Simmer 5 minutes. Peel and dice avocado, toss with lemon juice. Combine all with rice and sprinkle with parsley. Toss again and serve.
