Creole Rice Pilaf

ingredients

  • 2 1/4 cups chicken broth *
  • 1/4 cup white wine *
  • (*adjust for rice quantity as per liquid instructions on box)
  • 1 stick butter
  • 1-cup brown rice
  • 1/4 cup onion, chopped
  • Salt and pepper - to taste
  • 1/2 teaspoon oregano
  • 1 1/4 cups mushrooms sliced (optional)
  • 1/2 teaspoon garlic
  • 1/2 teaspoon dried parsley
  • 2 tomatoes, peeled, seeded, and diced
  • 1 ripe avocado
  • Lemon juice

directions

Cook rice in broth, wine and 6 tablespoons butter. Saute onion, garlic and mushrooms in remaining butter, 3 minutes. Add tomatoes, oregano and season with salt and pepper to taste. Simmer 5 minutes. Peel and dice avocado, toss with lemon juice. Combine all with rice and sprinkle with parsley. Toss again and serve.
