Mexican Cornbread
ingredients
- 2 1/2 C yellow cornmeal
- 1 C white flour
- 2 Tb sugar
- 1/2 Tb salt
- 3 eggs
- 1 1/2 C buttermilk
- 1/2 C oil
- 1 (16oz) can cream style corn
- 1 lb ground beef, cooked
- 1 medium onion
- 2 C shredded cheddar cheese
- chopped jalapeños to suit taste

Preheat oven to 425*F. In a large bowl, combine cornmeal, flour, sugar, and salt; mix well. In a separate bowl, beat 3 eggs, then mix into the flour mixture. Add buttermilk and oil. When well blended, add corn, ground beef, onion, cheese, jalapeños. Pour batter into pan(s) of choice. Bake at time found below:
