Chicken Enchiladas
ingredients
- 1 lb chicken tenders
- 1 tsp garlic powder
- 1 tsp onion powder
- 8 flour tortillas
- 2 C sour cream
- 3/4 C green onions, chopped
- 1 tsp cumin
- 1 C shredded cheese
directions
Preheat over to 350*F. Spray 9x13" baking dish with cooking spray. Spray skillet with cooking spray and heat over med-high flame. Add chicken and season with garlic and onion. Cook 3 minutes per side, or until chicken is no longer pink in the middle. Place one piece of chicken in each tortilla. In a bowl combine sour cream, green onion, and cumin. Divide sour cream mixture evenly between 8 tortillas and rull up burrito-style. Place seam side down in baking dish. Sprinkle with shredded cheese and cover dish with foil. Bake for 35 minutes.

Lactose intolerant? Substitute Miracle Whip for sour cream. If you don't cover the dish with foil, the cheese will be hard and crunchy.
