Coconut Rice
To be served with Mango Chicken.
ingredients
- 1 1/3 C white rice
- 2 1/2 C water
- 1/2 tsp salt
- 1/3 C coconut milk
- 1/4 C shredded coconut
directions
Rinse rice thoroughly under cold water until it runs clear. Drain. Place rice in wok & pour in water, milk, & salt. Bring to boil then reduce heat, cover, & let simmer for 10 minutes. Fluff with fork & garnish with coconut.
