Sweet & Sour Chicken with Mango
A very sweet, exotic dish, which is best served with coconut rice.
ingredients
- 1 Tb oil
- 6 chicken breasts
- 1 ripe mango
- 2 cloves garlic
- 8 oz scallions
- 1/2 C bean sprouts
- 1 Tb vinegar
- 2 Tb honey
- 2 Tb ketchup
- 1 tsp cornstarch
directions
Cut chicken into cubes. Slice mango & scallions. Heat oil in wok & stir fry chicken for 10 minutes. Add garlic, mango, scallions, & bean sprouts. Stir fry for 3 minutes. Mix together vinegar, honey, ketchup, & cornstarch in a bowl & pour over chicken. Stir fry until sauce thickens.
