Five Spice Eggplant
ingredients
- 1 large eggplant
- 1 egg white
- 3 Tb cornstarch
- 2 tsp salt
- 1 Tb Chinese five spice
- oil for deep frying
directions
Slice the eggplant. Place egg white in a bowl and beat until foamy and light. Mix cornstarch, spice, & salt on a large plate. Heat oil for deep-frying. Dip each slice in egg & then in powder mixture. Deep fry in batches for 4-5 minutes, or until golden brown and crispy.
