Fried Rice
I surely didn’t create fried rice, but I did this without use of a reference recipe, so it’s kinda original.
ingredients
- 2 C water
- 2 C rice
- 1 chicken breast
- 5 Tb oil
- 1/2 C teriyaki sauce
- 1/2 C soy sauce

In a small saucepan, bring water to boil. Once boiling, remove from heat and add rice. Cover & set aside.

Meanwhile, in a large skillet, heat 1 Tb oil. Fry chicken breast, about 5 minutes on each side, until brown and cooked through. Cut into small strips & set aside. (I know it seems silly to use a big skillet for 1 piece of chicken, but you’ll be frying the rice in it too.)

Add remaining oil to skillet. Add cooked rice, teriyaki, and soy sauce. Fry, stirring constantly to prevent sticking, until a nice golden brown then remove from heat. Add chicken & serve.

Don't skimp on oil! This stuff sticks!
