Fried Rice

I surely didn’t create fried rice, but I did this without use of a reference recipe, so it’s kinda original.

  • In a small saucepan, bring water to boil. Once boiling, remove from heat and add rice. Cover & set aside.

  • Meanwhile, in a large skillet, heat 1 Tb oil. Fry chicken breast, about 5 minutes on each side, until brown and cooked through. Cut into small strips & set aside. (I know it seems silly to use a big skillet for 1 piece of chicken, but you’ll be frying the rice in it too.)

  • Add remaining oil to skillet. Add cooked rice, teriyaki, and soy sauce. Fry, stirring constantly to prevent sticking, until a nice golden brown then remove from heat. Add chicken & serve.
