Dan Dan Mein
1 lb ground pork
½ C barbeque sauce
1 lb fresh Chinese noodles
3 Tb oil
⅓ C chicken broth
1 C bamboo shoots
½ lb bean sprouts
2 green onions, finely chopped
¾ tsp salt
¾ tsp sugar
¾ tsp soy sauce
2 tsp cornstarch
1½ Tb bean sauce
1½ Tb chili sauce
3 Tb oyster sauce
2 tsp sugar
2 tsp garlic powder
Place ground pork in a bowl. Add seasoning ingredients & barbeque sauce; mix well & set aside.
To make sauce, mash bean sauce into a paste. Add chili sauce, oyster sauce, sugar, & garlic; mix well & set aside.
Bring water to a boil & add noodles. Boil uncovered for 2 minutes, stirring often to prevent sticking. Drain and rinse thoroughly.
Heat wok (or large skillet) & add 1 Tb soil. Add ground pork and stir fry for 2 minutes over high heat. Add chicken broth & bamboo shoots. Cover & cook for 2 minutes. Add bean sprouts & stir fry for 1 minute. Remove from wok & set aside.
Rinse noodles under cold water again & drain (they must be slightly moist so they don’t stick together). Add 2 Tb of oil to heated wok and add noodles. Stir fry for 2 minutes over high heat.
Add sauce mixture & mix thoroughly. Then add pork mixture as well. Remove to a platter & sprinkle with green onions. Serve.
