grilled shrimp tacos

  • ½ cup sour cream

  • 3 Tbs mayonnaise

  • 3 Tbs milk

  • ½ tsp ground cumin

  • mix together and set aside

  • 1½ lbs large peeled & deveined shrimp

  • 3 Tbs butter, melted

  • 2 large garlic cloves, minced

  • 4 limes cut in quarters

  • ½ tsp sea salt

  • 8 six-inch corn tortillas

  • 2-3 cups shredded cabbage

  • green tomatillo sauce

  • Guacamole

  • Spear shrimp on skewers. Mix garlic and butter in bowl and brush on shrimp. Place shrimp kebabs on grill along with the lime wedges. Cook 4 minutes per side, until shrimp are opaque, and limes are browned. Remove from grill. Lightly salt shrimp. Grill tortillas for 30 seconds a side.

  • To serve, pull the shrimp off the skewers and divide evenly among tortillas. Top with cabbage, sour cream sauce, tomatillo sauce & guacamole. Spritz with lime.

The grilled garlic shrimp are great. They don't have to be in tacos, but can be a side in a surf & turf and etc.
