Teriyaki Stir-Fried Salmon
Not too keen on fish, but this is so delicious it’s worth the high price for salmon.
ingredients
- 1 lb salmon fillet, skinned
- 2 Tb soy sauce
- 2 Tb ketchup
- 1 tsp vinegar
- 1 Tb sugar
- 1 clove garlic, crushed
- 4 Tb oil
- 1 leek, thinly sliced
directions

Cut salmon into slices & place in shallow dish. Mix together soy sauce, ketchup, vinegar, sugar, & garlic. Pour mixture over salmon, toss well, & marinate for 30 minutes.

Meanwhile, heat 3 Tb of oil in preheated wok (or skillet). Add leeks & stir fry over medium heat for 10 minutes. Remove leeks with slotted spoon & put on warm serving plates.

Add rest of oil, salmon, & marinade to wok. Stir fry for 2 minutes. Spoon over leeks & serve.
notes
Do not use metal or stainless steel bowls or utensils while cooking salmon. Salmon tends to soak up the "taste" of metal.
