A very quick and easy meal all made in in skillet. Kinda like Hamburger Helper, only edible!
4 chicken breasts
1 pkg taco seasoning mix
1 Tb oil
2 C water
2 C uncooked rice
1 C sour cream
1 C shredded cheese
Sprinkle chicken with 1 tsp taco seasoning mix each. Heat oil in large skillet on med-high heat. Add chicken; cook 5 minutes on each side until cooked through. Remove from skillet & set aside. Add remaining taco seasoning & water; bring to boil. Stir in rice; cover. Reduce heat to low; cook 5 minutes. Stir in sour cream. Top with chicken; sprinkle with cheese. Cover. Continue cooking for 1-2 minutes or until cheese is melted. Top with sour cream & cilantro.
