corn fritters
Great with lobster roll sandwiches...
ingredients
- 1 can (1 lb) whole kernel corn, drained
- 1 egg
- 1/2 tsp salt
- 1/4 cup milk
- 1 cup flour
- 2 tsp baking powder
- 2 tsp melted butter
- 1/2 tsp sugar
- fat/oil for deep frying

While corn is draining, mix egg, salt, milk, flour, baking powder, butter and sugar. Stir with a wooden spoon. Let sit for 5 minutes.

Heat fat. Drop corn mixture by teaspoonfuls into hot fat. Cook until puffy and golden brown. Only cook a few at a time to avoid crowding in the pan.

Drain on a paper towel. Serve warm with honey.
