mom's gazpacho plus
Green peppers?
ingredients
- 4 green onions (scallions) chopped thin
- 1 cucumber, pared, chopped coarse
- 1 green pepper, chopped(?)
- 4 medium tomatoes, (may be heirloom) chopped
- 2 Tbs minced parsley
- 1 clove garlic mashed
- 1 red onion chopped
- 1 tsp salt
- 1/2 tsp pepper
- 3 Tbs Olive oil
- 1/4 cup red wine vinegar
- 2 cups tomato juice
- dash of Tabasco or Sriracha hot chili sauce
directions

Combine all ingredients (except the pepper) and refrigerate 1-2 hours before serving.

Serve with dollop of sour cream and croutons.

We usually double the recipe and skip the green pepper.

Another genius idea is skipping the tomato juice, and pureeing half of giant bowl to create the “stock.”

This started as Mom's recipe, but there were a few additions and subtractions (red onions and peppers being two) Plus the substituting a purée for tomato juice.
