Chili Max
Quite hot
⅓ Cup of Oil
2 large Onions (chopped)
1½ - 2 Lbs Ground Beef
1½ - 2 Lbs Cubed Pork
4 tsp smoked paprika
⅓ Cup Chili Powder
3 Tbsp Ground Cumin
3 Tbsp Ground Oregano
3 Tbsp Unsweetened Chocolate Powder
2 Tbsp Cinnamon
2 Tbsp Cayenne Pepper (or more)
3-4 cups Tomato Juice (or spicy V8)
Salt
8 garlic cloves (chopped)
1 cup Mesa Harina or cornmeal
4 Tomatoes (diced)
3 cups of beef stock
1 Can of Coke or a bottle of ale (use your judgment here)

1 onion (chopped)
Season the pork with smoked paprika, salt & pepper. Brown the cubed pork & put aside. Brown the ground beef & put aside. Put onions in oil, and add all the meat, the beef stock, tomato juice and the spices. Add the tomatoes, and cook for an hour.
I just add a little coke here and a little coke there. Add the garlic, and cook for another ½ hour or so.
