Chili Max

Quite hot

  • ⅓ Cup of Oil

  • 2 large Onions (chopped)

  • 1½ - 2 Lbs Ground Beef

  • 1½ - 2 Lbs Cubed Pork

  • 4 tsp smoked paprika

  • ⅓ Cup Chili Powder

  • 3 Tbsp Ground Cumin

  • 3 Tbsp Ground Oregano

  • 3 Tbsp Unsweetened Chocolate Powder

  • 2 Tbsp Cinnamon

  • 2 Tbsp Cayenne Pepper (or more)

  • 3-4 cups Tomato Juice (or spicy V8)

  • Salt

  • 8 garlic cloves (chopped)

  • 1 cup Mesa Harina or cornmeal

  • 4 Tomatoes (diced)

  • 3 cups of beef stock

  • 1 Can of Coke or a bottle of ale (use your judgment here)

  • Cheddar Cheese

  • Sour Cream

  • 1 onion (chopped)

  • Season the pork with smoked paprika, salt & pepper. Brown the cubed pork & put aside. Brown the ground beef & put aside. Put onions in oil, and add all the meat, the beef stock, tomato juice and the spices. Add the tomatoes, and cook for an hour.

  • I just add a little coke here and a little coke there. Add the garlic, and cook for another ½ hour or so.
