My Grandma Ann used to make these cookies during the holidays. It requires a pizzelle maker.
6 eggs, beaten
1½ C. sugar
1½ C. melted butter
4 C. flour
2 tsp baking powder
1 tsp almond extract
2 tsp vanilla
2 tsp anise extract
Beat the eggs and add the sugar; mix until smooth. Add the melted butter, vanilla and anise. Next, add the flour, baking powder and eggs and mix thoroughly.
Once the batter is finished, make sure the pizzelle iron is turned on and warm. Lightly coat the iron with non stick cooking spray. Pour a thin layer of the batter into the pizzelle maker. Once the cookie is golden brown, remove from the iron with a fork. Continue until all of the batter has been used.
