Pizzelle Cookies

My Grandma Ann used to make these cookies during the holidays. It requires a pizzelle maker.

  • 6 eggs, beaten

  • 1½ C. sugar

  • 1½ C. melted butter

  • 4 C. flour

  • 2 tsp baking powder

  • 1 tsp almond extract

  • 2 tsp vanilla

  • 2 tsp anise extract

  • Beat the eggs and add the sugar; mix until smooth. Add the melted butter, vanilla and anise. Next, add the flour, baking powder and eggs and mix thoroughly.

  • Once the batter is finished, make sure the pizzelle iron is turned on and warm. Lightly coat the iron with non stick cooking spray. Pour a thin layer of the batter into the pizzelle maker. Once the cookie is golden brown, remove from the iron with a fork. Continue until all of the batter has been used.
