Enchiladas

ingredients
- Two 28 oz cans whole tomatoes, drained
- 2 fresh jalapenos, seeded and stemmed
- 1 1/2 Tbs vegetable oil
- 1 medium onion, chopped
- 2 cups chicken broth
- salt
- 1/2 cup whipping cream
- 2 cups shredded rotisserie chicken
- 2/3 cups shredded cheese (jack, cheddar, or asadero)
- 12 corn tortillas
- a few slices of onion for garnish
- cilantro for garnish
- guacamole for topping
