ingredients

  • Two 28 oz cans whole tomatoes, drained
  • 2 fresh jalapenos, seeded and stemmed
  • 1 1/2 Tbs vegetable oil
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • salt
  • 1/2 cup whipping cream
  • 2 cups shredded rotisserie chicken
  • 2/3 cups shredded cheese (jack, cheddar, or asadero)
  • 12 corn tortillas
  • a few slices of onion for garnish
  • cilantro for garnish
  • guacamole for topping
