Quesadillas
Simple, but one of my favorites.
ingredients
- Low fat or low carb tortilla
- Low fat cheeses of your choice
- Chicken (if desired cooked and diced or sliced
- Onions, Peppers, Tomatoes, etc. (if desired) diced
- Olive oil
- Salsa, Guacamole, and/or Sour Cream

Lightly oil pan and place tortilla into it over med/low heat. Make sure you have your ingredients ready and close by.

Brown tortilla on one side to desired crispness.

Turn (turn down heat slightly)
- 4
Add your Cheese, meat and veggies and fold over in half. Cooking to desired crispness.

Turn and cook other side.
- 6
Serve with Salsa, Guac and/or sour cream
