Quesadillas

Simple, but one of my favorites.

  • Low fat or low carb tortilla

  • Low fat cheeses of your choice

  • Chicken (if desired cooked and diced or sliced

  • Onions, Peppers, Tomatoes, etc. (if desired) diced

  • Olive oil

  • Salsa, Guacamole, and/or Sour Cream

  • Lightly oil pan and place tortilla into it over med/low heat. Make sure you have your ingredients ready and close by.

  • Brown tortilla on one side to desired crispness.

  • Turn (turn down heat slightly)

  • Add your Cheese, meat and veggies and fold over in half. Cooking to desired crispness.

  • Turn and cook other side.

  • Serve with Salsa, Guac and/or sour cream
