Breakfast burrito
I like to fix this breakfast at the lake. It’s easy and everyone can take it and go.
10 Low fat or low carb tortillas
6 Eggs or use egg substitute
¼ cup low fat milk
2 TBSP margarine
Salt & pepper
1 pkg. mild Rice Sausage or turkey sausage for ligter version
2½ cups grated cheese of choice
Salsa
Other additions if desired: peppers/onions (throw in with sausage), potatoes (cook fresh or frozen first and layer with meat and eggs), sour cream ...
Brown sausage and set aside.
Scramble eggs with milk, butter, salt and pepper.
Layer sausage and eggs in tortilla, top with cheese and salsa.
Adding the other ingredients like potatoes, onions or peppers may make this recipe take a little longer to prepare, but will taste delicious.
