Breakfast burrito

I like to fix this breakfast at the lake. It’s easy and everyone can take it and go.

  • 10 Low fat or low carb tortillas

  • 6 Eggs or use egg substitute

  • ¼ cup low fat milk

  • 2 TBSP margarine

  • Salt & pepper

  • 1 pkg. mild Rice Sausage or turkey sausage for ligter version

  • 2½ cups grated cheese of choice

  • Salsa

  • Other additions if desired: peppers/onions (throw in with sausage), potatoes (cook fresh or frozen first and layer with meat and eggs), sour cream ...

  • Brown sausage and set aside.

  • Scramble eggs with milk, butter, salt and pepper.

  • Layer sausage and eggs in tortilla, top with cheese and salsa.

  • Adding the other ingredients like potatoes, onions or peppers may make this recipe take a little longer to prepare, but will taste delicious.
