Banana Nut Bread
Our cookbook would not be complete without this classic favorite from our Mother. Enjoy!
2¼ cups sugar
¾ cup butter
3 eggs, beaten
6 Tbs. buttermilk
4-5 ripe bananas
3 cups flour
1½ tsp. baking soda
1½ cups pecan pieces
2 tsp. vanilla
1. In a mixing bowl, cream together sugar and softened butter. Mix in 3 eggs and buttermilk. Combine thoroughly.
2. Peel and mash bananas. Beat the bananas into the batter.
3. Add flour and baking soda to the batter. Mix completely.
4. Add pecans and vanilla to the batter. Beat until batter is smooth.
5. Grease and flour three loaf pans and equally divide the batter into the pans. Bake loaves at 350 degrees for 40 minutes.
Banana nut bread can be wrapped and frozen.
