Cream of Potato Soup
Our Christmas tradition, and great on cold evenings too! Very economical!
ingredients
- 6 cups water
- 2 cans evaporated milk
- 1/2 stick butter
- 8 potatoes, peeled and cut into one inch chucks
- 1 white cut onion
- 4 stalks of celery
- salt and pepper to taste
directions
Cover potatoes, celery, onion, salt and pepper with water and boil in dutch until desired tenderness (I like mine kind of firm). Pour off all but enough water to cover the vegetables, add canned milk and butter. Heat to desired temperature. Add more salt, pepper or butter if desired until it tastes just right! Enjoy!

Top with crumbled bacon if desired.
