Cornbread Dressing

ingredients

  • 2 cups cornbread, crumbled
  • 2 slices stale bread or biscuits
  • 1 1/3 cups chicken or turkey broth
  • 2 tbls. butter
  • 1 small onion, chopped
  • 1/4 cup celery, chopped
  • 1 egg, well beaten
  • 1/4 cup evaporated milk
  • 1/4 tsp. sage
  • 1/4 tsp. poultry seasoning
  • 1 tbls. parsley, chopped
  • salt
  • pepper
  • 1 tbls. green onion, chopped
  • 2 eggs, hard boiled & chopped
  • paprika

    In small saucepan saute onion and celery in butter. Set aside.

    Mix well beaten egg with evaporated milk. Set aside.

    In large bowl combine cornbread, stale bread and cooled broth. Mix thoroughly. Add sauted onion and celery, eggs and milk mixture, seasonings, green onion and hard boiled eggs. Mix well.

    Pour into well greased baking dish, dust top with paprika. Cover and bake at 350 degrees for 45 minutes.

This is the traditional Thanksgiving dressing passed down from my mom.
