Portuguese Beans
This is a five generation picture of Granny Mia, Mom, Me, Ricky, and Drew when he came home from the hospital. 1991
ingredients
- 2 pounds pinto beans
- 1/2 cup onions
- 3 cloves garlic
- 8 ounce can tomato sauce
- 1 stick of linguica sliced
- 1 teaspoon cumin
- 1 tablespoon paprika
- 1 tablespoon cinnamon, Optional
- salt to taste
directions
Cover beans with water and soak overnight. In the morning, drain and add fresh water to cover beans by two inches and simmer for about 2 hours or until tender adding water when needed. Meanwhile, in a large skillet, combine onions, garlic and linguica. Fry together until onions are translucent. Add to cooked beans. Add tomato sauce and seasonings. Simmer another 2 hours.
