ingredients

  • 2 pounds pinto beans
  • 1/2 cup onions
  • 3 cloves garlic
  • 8 ounce can tomato sauce
  • 1 stick of linguica sliced
  • 1 teaspoon cumin
  • 1 tablespoon paprika
  • 1 tablespoon cinnamon, Optional
  • salt to taste

directions

Cover beans with water and soak overnight. In the morning, drain and add fresh water to cover beans by two inches and simmer for about 2 hours or until tender adding water when needed. Meanwhile, in a large skillet, combine onions, garlic and linguica. Fry together until onions are translucent. Add to cooked beans. Add tomato sauce and seasonings. Simmer another 2 hours.
