This is a way to hide a serving of broccoli for those people in your family, who think potato chips are a vegetable.

ingredients

  • 1 10 oz box of Green Giant Frozen Broccoli with Cheese Flavored Sauce
  • 1 10.2 oz can of refrigerated biscuits
  • 10 eggs
  • 1 1/2 cups of milk
  • 1 teaspoon dry ground mustard
  • salt and pepper to taste
  • 2 cups diced cooked ham
  • 1/3 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup shredded swiss cheese
  • 1 4.5oz jar of sliced mushrooms, drained

    1. Heat oven to 350. Cut a small slit in center of broccoli and cheese sauce pouch. Microwave of high for 3-4 minutes. Set aside to cool.

    2. Meanwhile, spray bottom of a 13x9 inch baking dish with cooking spray. Separate dough into 5 biscuits. cut each biscuit into 8 pieces; and arrange evenly in sprayed dish.

    3. In large bowl, beat eggs, milk , mustard, salt and pepper with a wire whisk until well blended. Stir in ham, onion, both cheeses mushrooms and cooked broccoli and cheese sauce. Pour mixture over biscuit pieces in dish. Press down with back of spoon, making sure all biscuit pieces are covered with egg mixture.

    4. Bake at 350 for 40-50 minutes or until center is set. Let stand 10 minutes before serving.

notes

To decrease the calories and fat I sometimes use 5 eggs and 1 1/4 cups of egg substitute instead of 10 eggs. I also use skim milk , light biscuits and replace part of the regular cheese with lower fat cheese.
