Mediterranean Lamb Chops
ingredients
- 4 loin lamb chops (1 1/4 to 1 1/2 inches thick)
- 2 tbsp. Greek herb rub & dry marinade
- 1 tbsp. extra virgin olive oil
- 1/4 cup pitted kalamata olives
- 1/4 cup small pimiento stuffed green olives

Sprinkle both sides of lamb chops generously with marinade; press into meat.

Heat olive oil in medium-size skillet over medium-high heat. Add lamb chops; cook 3 minutes on each side to sear.

Reduce heat to medium-low. Add olives to skillet and cook an additional 4 to 6 minutes for medium, or to desired doneness. Serve olives over lamb chops.
