Yummy dessert for Christmas and parties. Also makes a great holiday gift.

ingredients

Cake:
  • 3 eggs
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 2/3 cup pumpkin
  • 3/4 cup self rising flour
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon vanilla
  • Mix all ingredients, pour into baking sheet.Bake for 15 minutes at 350 degrees.
Filling:
  • 1 large package cream cheese- softened
  • 3 tablespoons margarine- softened
  • 1 1/2 cups powdered sugar- sifted

directions

Cool cake in pan for 20 minutes. Take cake out of pan, cut off edges, and wrap warm cake in a towel. Place wrapped cake in the refrigerator for 1 hour. Unroll, spread filling on cake and roll back up. Wrap back up and keep in refrigerator.
