Pumpkin Nut Roll
Yummy dessert for Christmas and parties. Also makes a great holiday gift.
ingredients
Cake:- 3 eggs
- 1 cup sugar
- 1 teaspoon lemon juice
- 2/3 cup pumpkin
- 3/4 cup self rising flour
- 2 teaspoon cinnamon
- 1 teaspoon ginger
- 1 teaspoon vanilla
- Mix all ingredients, pour into baking sheet.Bake for 15 minutes at 350 degrees.
- 1 large package cream cheese- softened
- 3 tablespoons margarine- softened
- 1 1/2 cups powdered sugar- sifted
directions
Cool cake in pan for 20 minutes. Take cake out of pan, cut off edges, and wrap warm cake in a towel. Place wrapped cake in the refrigerator for 1 hour. Unroll, spread filling on cake and roll back up. Wrap back up and keep in refrigerator.
