Salmon Party Log
This recipe is one of my first. When i was sixteen my mom needed a appetizer for a party, I found this in a book and thought it looked good. Easy to make and very well known.Being one of my first recipes that started me in the cooking arena, It had to go in the book.
ingredients
- 1 (1 pound) can of Salmon, Drained, flaked, remove bones and skin
- 1 (8oz) cream cheese, softened
- 1 Tablespoon lemon juice
- 2 teaspoon onion, grated
- 1 teaspoon prepared horseradish
- 1/4 teaspoon salt
- 1/4 teaspoon liquid smoke
- 1/2 cup chopped pecans
- 3 Tablespoons snipped fresh parsley

In a medium bowl, combine Salmon, Cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke, mix thoroughly. Chill for several hours. Shape into a 8x2-inch log.

Combine pecans and parsley and spread on a cookie sheet. Roll the salmon log over the pecan mixture to cover the sides. Chill well. Serve with crackers.
