Black Bean Soup

ingredients
- 4 cans seasoned black beans
- 2 cans low sodium chicken broth
- 1/2 bunch cilantro, chopped
- 1 cup fresh pico
- 1 Tbl cumin
- 1 Tbl garlic, minced
- Avocado
directions
Puree 3 cans of beans in a food processor. Pour into a large soup pot and add remaining can of beans and all other ingredients. Simmer for 20 minutes or longer. Serve and top with sliced avocado.
notes
For a fuller meal, add skinless roasted chicken near the end of simmering or as a topping.
