Frijoles Refritos
Un-refried low fat and delicious. Great for dip or in burritos.
ingredients
- 1 can black beans (rinsed)
- 1 medium red onion
- 1 tsp cumin
- 1 tsp chili powder
- 1 Tbsp olive oil
directions
In a small saucepan saute onion in olive oil until translucent. Add spices and cook one minute. Add beans and bring to a boil, reduce heat to low and mash the beans until desired consistency. Cook for 2 minutes. Add salt to taste.
