Spinach Balls

When I was a kid, my mom hosted an ornament exchange party during the holidays and always made these spinach balls. I vaguely remember her putting a pimiento in the center of one of them - I don’t know if it was a special surprise or supposed to be good luck. Whatever the case, these were so yummy that Dan and I would fill up on these instead of the cookies.

ingredients

  • 1 package chopped spinach, cooked and drained
  • 1 cup dried bread crumbs
  • 1 egg, beaten
  • 1 very small onion, minced
  • 1 teaspoon garlic powder
  • Cayenne pepper (to taste, optional)
  • 1/4 cup butter, melted
  • 1/4 cup parmesan cheese
