Parisian Soup (Creamy Vegetable Soup)

1 Tbsp butter
1 cup chopped onion
2 tsp parsley
1 bag frozen California blend vegetables
14 oz. chicken broth
2 Tbsp flour
½ tsp pepper
1 cup milk
⅓ Velveeta cheese log
½ lb diced ham cubes

In a large saucepan, sauté onion in butter. Add parsley, veggies, ham and broth. In a shaker, combine flour, pepper and milk. Slowly whisk into soup. Heat until just boiling. Add cheese. Reduce heat. Do not boil.
