Sautéed Green Beans
This is an easy and tasty side dish that goes with just about anything. The technique of blanching and then sautéing the vegetables can be used with just about anything from broccoli to asparagus to peas.
ingredients
- 2 lbs. string beans, washed and ends trimmed
- 3 cloves of garlic, minced
- 1/4 cup olive oil
- dash of salt
- dash of pepper

Bring a large pot of water to a boil. While that is heating up, fill a large bowl halfway with ice and then add cold water until the bowl is about three-quarters of the way full.

When the water is boiling, add the string beans and cook for two minutes. Remove the string beans using a slotted spoon to the ice water.

When the ice has melted and all string beans have been submerged, drain out the water from the string beans. Heat a skillet over medium heat, and add the olive oil. When the oil is just heated, sauté the garlic. When you can smell the garlic cooking, add the string beans and stir to coat. When the string beans are heated through completely, it is done. Season to taste with salt and pepper.
