Easy, filling, and flavorful soup cooks up in a flash and everybody loves it.
6 strips of cooked, diced Bacon
3 cups cubed Potatoes
1 can of Chicken Broth
1 bag of Shredded Carrots, chopped
3 ribs of Celery, chopped
1 small Onion, chopped
1 tbls Dried Parsley
3 tbls Flour
3 cups Milk
8 oz Processed American Cheese, cubed
Salt and Pepper to taste
In a large stockpot combine bacon, potatoes, chicken broth, carrots, celery, onion, and parsley. Cover and simmer until the potatoes are tender (about 15 minutes). Combine flour and milk and mix until smooth. Add to soup and stir for 2 minutes. Add cheese. Once cheese has melted the soup is ready!

If you want to make this more like Dad's you can use some "cream-of" soup, mushrooms, and (of course) mustard seeds!
