Pork Tenderloins Parmesan
Here is another great meal. I made this years ago for the kids and they just loved it. I added my favorite red sauce to the mix and the final product was great,
ingredients
Sauce- 2 Tablespoons Olive Oil
- 2 Garlic cloves, crushed
- 1 small onion, chopped
- 1 (6oz) can tomato paste
- 1 (7oz) can tomato sauce
- 1 cup water
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dries thyme
- 1/2 teaspoon dried rosemary
- 1 bay leave
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sugar
- 2 pounds pork tenderloin cutlets, flattened
- 1/2 cup Parmesan cheese, grated
- 3/4 cups bread crumbs
- 2 eggs, beaten
- 3/4 cup mozzarella cheese, grated
- 1/4 olive oil

In heavy sauce pan, heat oil over medium heat. Add onion and garlic and sauté for 2 to 3 minutes. Add Tomato sauce, paste and water, bring to a boil. Stir in basil, oregano, thyme, rosemary, bay leave, salt, pepper, and sugar. Reduce heat to a simmer, cover sauce and let simmer for 1 hour. stirring occasionally. Remove bay leaf before serving.

Preheat oven to 350°

While sauce is simmering, Dip tenderloins in beaten eggs seasoned with salt and pepper.Dredge each cutlet in bread crumbs.

In a large skillet over medium high heat oil and brown tenderloin cutlets on both sides.

place tenderloins in a 13x9 baking dish, pour sauce over meat and sprinkle liberally with Parmesan cheese.

cover with foil and bake for 30 minutes. Remove foil, sprinkle with mozzarella, return to the oven, uncovered, for 15 minutes.
notes
serve with cooked pasta. we tend to double the sauce. you can also substitute chicken breast for the pork tenderloins.
