Pumpkin Bread - Diane
I made several batches of this pumpkin bread every year when I lived in Tucson for the Tucson Art Center Christmas Fair and it never ceased to be a big hit. Still make it today for Christmas gifts.
ingredients
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 3 cups sugar
- 1 cup oil
- 4 eggs
- 1 1/2 tsp. salt
- 2 cups pumpkin
- 2/3 cup water
- 2 tsp. soda
- 3 1/3 cup flour
- 1 cup raisins
- 1 cup nuts

Mix first 6 ingredients together well and then add other ingredients in the order given. Mix well and then put in either 3 one lb. ungreased coffee cans or 3 large foil loaf pans.

Bake at 350 degrees for about an hour or until tooth pick inserted in the center comes out clean.
