Bruschetta
Ally’s recipe - perfected!
ingredients
- 3 1/2 cups of diced tomatoes (all different types)
- a tablespoon of olive oil
- 1/2 tablespoon of sugar
- a 1/2 cup of basil (some chopped and some torn)
- 3 tablespoons of finely chopped garlic
- 2 peeled cloves of garlic
- 1/4 cup table red wine
- 1/4 cup of Balsamic Vinegar
- 1/4 cup of shredded Parmesan cheese
- kosher salt
- A pinch of sugar
- fresh ground pepper
- 1 French baguette sliced in 1/2 inch pieces

Dice the tomatoes, garlic and half the basil. Combine in a large bowl, add half the balsamic Vinegar and the wine. Place in the refrigerator for about an hour.

In the mean time, slice the bread and place in the oven at 350 for 10 minutes. Remove, and rub with garlic cloves. Sprinkle shredded Parmesan cheese and return to oven to melt the cheese.

Remove tomatoes from the fridge and add the remaining ingredients. Mix well. Return to refrigerator for another 20 minutes.

Spoon the mixture onto the warm bread slices. Top with a sprinkle of Parmesan cheese and serve immediately.
