Cranberry Cake
This dense, nutty cake is great with coffee. It freezes well to enjoy all through the holidays.
ingredients
- 3/4 c oil
- 1 1/2 c. sugar
- 2 eggs
- 2 1/4 c. self rising flour
- 3/4 c. buttermilk
- 1 c. chopped pecans
- 1 c. whole fresh or frozen cranberries
directions
Cream oil and sugar. Add eggs, then add flour and buttermilk alternately. Stir in nuts and berries. Bake in greased tube or bundt pan 350° for 50-60 minutes. Cool on wire rack.
