This is a favorite of many people every year. They really are yummy and very light.
1 box pudding recipe yellow cake mix
1 8oz pkg cream cheese, softened
⅓ c. sugar
⅓ c oil
1 teas lemon juice
2 eggs
Mix dry cake mix, 1 egg and ⅓ c. oil til crumbly. Reserve 1 cup of this mix. Pat remaining mixture lightly into ungreased 13 x 9” pan. Bake crust 15 minutes at 350°. Beat cheese, sugar, lemon juice and 1 egg until light and smooth. Spread over baked layer. Sprinkle with reserved crumb mixture. Bake 15 minutes longer.
Cool. Cut into bars.
