ingredients

  • 8 slices white bread
  • 8 oz sliced mozzarella chesses
  • 2 14 oz can Sliced tomatoes (or sliced fresh)
  • 1 13 oz can sliced mushrooms (drained)
  • 1 medium onion thinly sliced into rings
  • 5 eggs
  • 3 cups milk
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 garlic salt
  • Some Parmesan cheese
  • Some sliced olives

    Using round cookie cutter or lid from jar, cut bread into shapes or circles. Set aside.

    Place bread scraps in the bottom of buttered 9 x 13 baking dish. Layer half the cheese over the bread. Arrange half the tomatoes and all of the onions and mushrooms over the cheese.

    Cover with the rest of the cheese. Arrange the bread shapes. Put slices of tomatoes in center of each bread shape.

    Combine slightly beaten eggs, milk , salt, oregano, and garlic salt. Pour over bread. Sprinkle with Parmesan cheese and dot with olives. Cover.

    Refrigerate for 6 hours or overnight.

    Bake 1 to 1 1/2 in 325 degree oven, or until knife comes out clean.

    Let stand 5 minutes to firm

    I love this recipe. One hint: make sure the oregano is spread evenly over the whole pan or it will be very bland.

    Pretty tasty! Though mine came out a little wet. Fresh ingredients would dry it up a bit, maybe lessen the milk, too. But, my family loved it!
