Mom’s Christmas Breakfast Egg Casserole

  • 4 c cubed day-old firm white or french bread
  • 2 c (8 oz.) shredded cheddar cheese
  • 10 eggs, lightly beaten
  • 4 c milk
  • 1 t dry mustard
  • 1 t salt
  • Dash of freshly ground pepper
  • 1/2 c mushrooms, sliced
  • 5 italian sausages, cooked and sliced
  • 1/2 c chopped tomatoes

    Generously butter 9x13-inch baking dish. Arrange bread cubes in dish and sprinkle with cheese. Beat together next 5 ingredients and pour evenly over cheese and bread. Sprinkle with italian sausages, mushrooms and tomato. Cover and chill overnight.

    Preheat oven to 325 degrees. Bake casserole uncovered until set, about 1 hour. Cover with foil if top begins to overbrown.
